Slow Cooker Corned Beef Brisket

I’ve never cooked corned beef brisket, and I wanted to do something fun for St. Patty’s Day this year. And what’s more Irish than a corned beef brisket slow cooked in Guinness!? I found a nice corned beef brisket on sale at the grocery store and figured I’d give it a try. And OMG was I pleasantly surprised. It came out so tender and delicious.

I bought a brisket with a premade spice package. If you can’t find a brisket with the spice package, then you can make it with the following spices: 2 tbsp coriander, 2 tsp pepper corns, 1 tbsp mustard seed, 1 tsp anise seed, 3 bay leaves, and 1 tsp crushed red pepper flakes. Toast these for about minutes and you should be good to go!

Corned Beef Brisket Recipe

Corned Beef Brisket and Spice Package

2 tbsp brown sugar

4 cloves garlic, halved

1 can Guinness

Vegetables of your preference: Carrots, golden potatoes, and cabbage

  1. Place corned beef into slow cooker. Sprinkle the spice packet and sugar on top. Pour in Guinness and cook on low for 4 hours.

  2. Add the vegetables and cook until the internal temperature is 145F.

  3. Let cool before cutting and enjoy!
