Valentine’s Day Lava Cake
Obviously I wanted to spoil my fiancé on our last Valentine’s Day before we get married (crossing my fingers about COVID). His favorite dessert is brownies, and what is a lava cake other than an elevated brownie? I’ve been seeing them EVERYWHERE and really wanted to try my hand at it. I attempted none other than the Pioneer Woman’s recipe (original recipe here).
This was served after brown butter scallops with champagne risotto (recipe here). It was a decadent night, let me tell you. Aaaand diet starts Monday!
You will need ramekins. I ordered cheap ones at the last minute online(Thank you Mr. Bezos!). I have read that muffin tins work just fine; however, looking at my own muffin tins they just seemed way too small.
Valentine’s Day Lava Cake Recipe:
Cocoa Powder
Baking Spray (I use olive oil in a spray bottle)
1 stick butter
2 oz bittersweet chocolate
2 oz semi sweet chocolate
1 1/4 cup Powdered sugar (plus some to sprinkle ramekins)
2 whole eggs
3 eggs yolks
1 tsp vanilla
1/2 cup all purpose flour
Preheat the oven to 425F. Spray ramekins with olive oil. Sprinkle ramekins with cocoa powder and powdered sugar.
Over a stove, melt the butter and chocolate. Move to a bowl and stir in sugar. Whisk in the eggs and egg yolks. Add the vanilla. Finally stir in the flour and separate into ramekin dishes.
Bake until the sides are firm, but inside is soft. This will take about 12-13 minutes. Let stand for 1 minute. Cover with dessert plate, gently flip and remove the ramekin while warm.
